Berry & Broccoli Salad

Happy Monday! I hope you had a great weekend! We have been enjoying such amazing weather lately — rain, clouds, humidity! It is amazing (sarcasm)! haha I am hoping by the 4th we will have some beautiful sunshine for the long weekend! Before I get into today’s recipe, I wanted to share with you two quotes that my yoga instructor said in class yesterday. Both of these I found to be very powerful —
The first quote was, “Move Inward, Move Forward, Move Upward, Move Outward” This was the mantra that we took with us through the class.
The second quote, which ended class was, “Holding onto resentment is like drinking poison and expecting the other person to die.” In the end, the only person you end up hurting is yourself. So let go of the resentment and free yourself.
WOW! I don’t know about you, but both of these truly hit home with me in one way or another. Sorry if that was a bit heavy to start your Monday, but it is so important to look inside of ourselves and find ways to grow and letting go of things which create resentment or anger are one of those ways!
Another way is to whip up this delicious, fresh, beautiful summer dish! It is loaded with veggies, summer berries, protein and some amazing avocado! It is the perfect, quick and healthy dish for those bbq’s this week too! I hope you enjoy!
Fit Ingredients
- 1 bag (340g) broccoli slaw
- 1 c (140g) fresh strawberries, sliced
- 1/2c (70g) fresh blueberries
- 1 oz (28g) avocado, diced
- 1 tbs (7g) sunflower seeds (I use roasted and unsalted)
- 1/2c (113g) non fat greek yogurt
- Cinnamon and Stevia, to taste
Directions
1) Combine your broccoli slaw, greek yogurt, cinnamon and stevia in a bowl.
2) Mix until all slaw is coated.
3) Gently fold in your berries and avocado.
4) Sprinkle with sunflower seeds.
5) Serve!
This salad is one of my favorite hot weather meals! It is quick, easy and tastes amazing! Plus it is loaded with vitamins and minerals from the veggies and fruit!

*This makes one HUGE bowl, so feel free to divide it up between two or more people. Some shredded chicken breast would taste amazing in this too!
