BBQ Apple Chia Chicken Coleslaw

It’s that day of the week again when we get to share our Powermeal recipe of the week! Kasey over at Powercakes.net has been hosting this challenge every Sunday in the month of July! I am sad that this is the last Sunday of the month, but I guess we will have to wait and see if she continues the challenge or creates something new to keep our palates guessing!
Today’s recipe is something that is extremely quick to pull together, full of protein, fiber and healthy carbs from all the veggies! It makes the perfect dish to bring to your next bbq with family and friends!
Fit Ingredients:
- 3c (170g) coleslaw mix (not the one with dressing) or you can shred your own cabbage and carrot
- 1 medium apple (100g, diced
- 8oz cooked chicken breast, shredded
- 1/2c (112g) greek yogurt
- 2tbs (28g) bbq sauce of choice (try to find one that is lower in sodium)
- 1 tsp stevia
- 1/2 tbs chia seeds
Directions
In a bowl combine your coleslaw mix, diced apple and shredded chicken breast. In a second bowl mix together your greek yogurt, bbq sauce and stevia to form your dressing. Mix your dressing into your veggies and chicken. Give it a good toss to make sure everything is coated. Sprinkle with chia seeds! Quick and simple! The perfect hot summer time meal!
