Happy Monday! I hope you had a great weekend! We had absolutely AMAZING weather here! It finally feels like summer has arrived! I hope you were all able to get out and enjoy some fresh air…..and hopefully squeeze in some exercise too! Today I have a very simple and healthy cookie recipe for you! I threw these together in a matter of minutes to use up some bananas and they came out perfect! I hope you enjoy! Have a great Monday! :)

  1. 1/2c (56g) almond flour
  2. 1/4 c (28g) walnuts, ground (or very finely chopped)
  3. 1 tsp baking powder
  4. 1tsp ground cinnamon
  5. 1 large egg
  6. 1 medium banana (100g)
  7. 1/3c (40g) raisins, optional but HIGHLY recommended

Instructions

  1. Preheat your oven to 400 degrees
  2. Sift together dry ingredients
  3. Mix together eggs and mashed banana
  4. Combine wet and dry ingredients
  5. Fold in raisins
  6. Divide batter evenly on cookie sheet
  7. Bake for 14-16 minutes or until set
  8. Allow to cool
