Happy Monday! I hope you had a great weekend! We had absolutely AMAZING weather here! It finally feels like summer has arrived! I hope you were all able to get out and enjoy some fresh air…..and hopefully squeeze in some exercise too! Today I have a very simple and healthy cookie recipe for you! I threw these together in a matter of minutes to use up some bananas and they came out perfect! I hope you enjoy! Have a great Monday!

- 1/2c (56g) almond flour
- 1/4 c (28g) walnuts, ground (or very finely chopped)
- 1 tsp baking powder
- 1tsp ground cinnamon
- 1 large egg
- 1 medium banana (100g)
- 1/3c (40g) raisins, optional but HIGHLY recommended
Instructions
- Preheat your oven to 400 degrees
- Sift together dry ingredients
- Mix together eggs and mashed banana
- Combine wet and dry ingredients
- Fold in raisins
- Divide batter evenly on cookie sheet
- Bake for 14-16 minutes or until set
- Allow to cool
