Paleo Meal Prep: December 28th 2015

Ingredients:

1 bunch broccoli

1 container sliced portobello mushrooms

1 lb chicken breast

paleo ketchup

Method:

  1. Preheat oven to 350 degrees
  2. Line baking sheet with foil
  3. Place chicken on baking sheet
  4. Cook ~18 minutes or until cooked through
  5. Cut chicken into desired size pieces
  6. Chop broccoli
  7. Divide chicken, broccoli and mushrooms between 3-5 containers
  8. Put ketchup in small side container

*Broccoli and mushrooms will cook when container is reheated

12 hard boiled eggs

1lb roasted parsnips

roasted kabocha squash

4 apples + natural almond butter

2 pieces baked salmon

2 pieces baked cod

4 bags macadamia nuts + dried cranberries

large mixed green salad (greens + tomato + cucumber + carrots)
