White Chocolate Strawberry Scones

Start your day with a sweet and protein packed pastry, without all the guilt!
  • 2⅓ cup oat flour
  • 1.5 scoop strawberry protein powder
  • 2 tsp baking powder
  • 1 cup strawberry egg whites
  • 3 tbs honey
  • 2 tbs butter (or coconut oil), melted
  • 2 tsp pure vanilla extract
  • ½ cup diced strawberries
  • 2 tbs white chocolate, optional
  1. Preheat oven to 325 degrees
  2. Line a 8 inch cake pan with parchment paper*
  3. Mix together dry ingredients: oat flour, protein powder and baking powder
  4. Whisk together wet ingredients: honey, butter/coconut oil, vanilla extract and Strawberry Muscle Egg
  5. Combine wet and dry ingredients
  6. Pour batter into pan
  7. Sprinkle strawberries on top (or can mix into batter, if desired)
  8. Bake for ~32 minutes or until slightly under done
  9. Allow to cool (they will finish off during this time)
  10. Slice into 8 triangles
  11. Drizzle with white chocolate, if desired
*Baking in an 8 inch cake pan ensures a perfectly round and high rising scone. However, you can bake like a traditional scone on a baking sheet. Cook ⅔ of the way thru, slice and then return to the oven for remaining time. If batter is larger than 8in in diameter, adjust baking time accordingly.
