I don’t know about you, but when the cold weather is in full force all I crave is comfort food! Pizza, pasta, french toast, and anything with meatballs! I even have a special board on Pinterest for just comfort food! So, I figured why not combine a couple of those comfort foods into one easy One Skillet Spaghetti Squash & Meatballs recipe! It’s like a comfort food win! Especially because it is healthy too!
A good comfort food dish should fill you up both physically and emotionally! They are those dishes you remember enjoying with your family when you were a kid that make you feel all warm and fuzzy inside! I know big plates of pasta used to do that for me! Some of my best pasta memories are with my family on my dad’s side of the family. My Uncle makes the best pasta sauce ever!
So, when my Uncle’s pasta and sauce popped into my head a few weeks back I knew I needed to make something to satisfy my craving! So, I took what I had on hand that Sunday and whipped up this super easy and incredibly delicious One Skillet Spaghetti Squash & Meatballs dish!
You probably have the ingredients on hand to make the One Skillet Spaghetti Squash & Meatballs dish, but if you don’t just a quick trip to the store will cover it! Another win, this recipe is very cheap and makes the biggest, most comforting and filling portions!

- 1 large spaghetti squash, baked (I had 1.5 lbs after cooking)
- 2 large eggs or 1/2 cup egg whites
- 1 cup pasta sauce
- 1 recipe 20 minute meatballs , uncooked
- 1 cup shredded mozzarella cheese
- Preheat oven to 400 degrees
- Mix together spaghetti squash, eggs, 3/4 cup pasta sauce and 1/2 cup cheese
- Place into a cast iron skillet and baked 20 minutes
- Remove from the oven and top with remaining sauce, meatballs and cheese
- Return to the oven and bake for an additional 15-18 minutes or until meatballs are cooked
- Allow to cool slightly before serving
Nutrition for 1 out of 4 servings: 13g Carbs, 38g Protein, 15g Fat
Serve this hearty dish with a big side salad or even some toasted garlic bread!
