Three ingredients. That’s it! Could it be any easier? By now, I’m sure you know my love of all things quick (and easy)! And if you follow me on Instagram then you know my love of eggs! It’s really more like an obsession. We have the epic cheeseburger omelette, cajun salmon frittata, bacon, egg & mango waffles, and for my sweet side, banana split crepes. The crepes may be more like dessert, but they are still egg based! Win!

I love eggs for quite a few reasons. 1) they taste delicious! 2) they are very versatile (see above sweet and savory options), 3) they are an excellent source of protein, and 4) when my days are crazy and my head feels like it’s spinning at 7am I can make something quick and simple like this 3 Ingredient Baked Jicama Ranch Egg Stack in a matter of minutes!

Someone was on my side that morning because this delicious 3 Ingredient Baked Jicama Ranch Egg Stack turned out epic! Hence why you are seeing it today!

If you don’t have ranch seasoning you can make your own healthy version with one of these tasty recipes over on Pinterest! Or, feel free to use your favorite seasoning! Like I mentioned above the great thing about eggs is that they are so versatile! I have used garlic & herb, taco seasoning, pizza seasoning. They all work so good!
