Peanut Butter S’mores Chia Pudding
Chia seeds are one of my favorite superfoods. They are loaded with so many nutritional benefits like fiber, protein, and healthy fats. I try to include them in my diet 3-4 times a week in easy ways like mixed into paleo oats, smoothies and in sweet treats like this Peanut Butter S’mores Chia Pudding.
Ok, so I admit, I may have a slight obsession with chia seeds! Not only are they one of the most nutritious foods on the planet loaded with micronutrients, antioxidants, calcium, magnesium, iron, and zinc, but they are super easy to add to almost anything you eat! My favorite way besides this Peanut Butter S’mores Chia Pudding is in these almond butter bars! Wait, maybe it’s this chocolate peanut butter parfait! Scratch that. It’s definitely in cherry almond bars! Mmmmm….but then again if I am feeling savory maybe it’s just sprinkled onto a BBQ Apple Chicken Salad, which sounds really good right now since it’s fall and the apples are so fresh! Ok, enough of that. Clearly, I need to get some lunch in me! haha
Well, let me just tell you quickly how this little tasty Peanut Butter S’mores Chia Pudding recipe came about so you don’t think I am that crazy! Arizona, still hot during the day but oh so perfectly cool at night! It’s that time of year here when you just want to sit outside at night, read a good book and enjoy a yummy snack! Which happens to be exactly what I was doing, minus this Peanut Butter S’mores Chia Pudding of course!
I was sitting out by the pool reading a book one night. The air was crisp, I could smell someone grilling and then one of the kids yelled, “Dad, I want to make S’mores.” I was done. From that moment on all I could think about was s’mores. So, being the good intuitive eater that I am I headed inside to satisfy the craving. As I was going to grab the marshmallows and graham crackers from the shelf I saw my chia seeds and all of a sudden got a craving for chia pudding. Go figure! Now, I could have made the chia pudding right away, but I like it to sit overnight and get really thick and pudding like! So, I decided I would prep some pudding for the next day. The next day the s’mores craving was still lingering and well, the rest is history! This tasty Peanut Butter S’mores Chia Pudding ended up being snack the next day!
- 1 cup chocolate egg whites*
- ¼ cup chia seeds
- sweetener, as desired
- ½ graham cracker sheet
- 1 tbs mini marshmallows
- 1.5 tsp peanut butter
- Mix together chocolate egg whites, chia seeds and sweetener
- Place in the refrigerator overnight
- Pour into glass or bowl
- Top with graham cracker, marshmallows and peanut butter
I mean, how else can you get in tons of fiber, protein, healthy fats and a little sweetness? And if you are going low carb, just leave off the graham crackers and you are good to go! It’s as easy as that! Ok, maybe I am just trying to make myself feel better about making this more times than I can count. Just repeat with me: “Balance”
