Coconut Key Lime Macaroons 

When you can’t physically escape for a tropical vacation, you can mentally and emotionally escape with these tasty, protein packed macaroons! Made with only a few simple ingredients they are easy to make and very easy to enjoy 🙂

White Chocolate Coconut Key Lime Macaroons

Serves: 10-12
  • ¾ c shredded coconut
  • 1 scoop almond infused vanilla whey protein powder
  • ¼ key lime eggwhites*
  • 1 tbs key lime juice
  • stevia, to taste
  • white chocolate, if desired
  1. Add shredded coconut, whey protein powder, key lime eggwhites, key lime juice and sweetener to a food processor
  2. Pulse until a soft "dough" forms
  3. Using a measuring spoon in 1-2 in size (I used 1½ tbs), scoop and press into measuring spoon
  4. Gently slide out of spoon
  5. Repeat until all dough is gone
  6. Drizzle with white chocolate, if desired.
*if not using MuscleEgg key lime eggwhites, you can replace with 3 tbs milk + 1 additional tbs key lime juice OR 3 tbs PASTEURIZED liquid egg whites + 1 additional tbs key lime juice
