Paleo SuperFoods Granola

Who doesn’t love a sweet and healthy granola? It makes a great breakfast, snack, dessert…..or for me, sometimes lunch or dinner when paired with yogurt and fruit! This recipe is not only simple, but loaded with all the healthy benefits from things like pecans, coconut, pumpkin seeds and cranberries! Plus, it’s something both the kids and adults can enjoy! 🙂

Serves: 8 servings
  • 1 cup pecans
  • ½ cup shredded coconut
  • ½ cup pumpkin seeds
  • 2 tbs honey
  • 1 tbs coconut oil, melted
  • ⅛ tsp salt
  • ½ cup cranberries
  1. Preheat oven to 300 degrees
  2. Mix together all ingredients through salt
  3. Line baking sheet with parchment paper
  4. Evenly spread granola onto parchment
  5. Bake for about 22 minutes
  6. Mix in cranberries
  7. Allow to cool
  8. Store in a sealed container
