Cajun Salmon & Brussels Sprouts Frittata

It’s not often that I have leftover salmon, but when I do, I usually turn it into a quick breakfast the next day! This simple dish took only minutes to toss together and then baked while I was getting ready for the day! It also makes a great meal prep dish that you can reheat for a quick mid week meal when you are in a rush! I hope you enjoy! xxoo

  • 2 large eggs
  • splash milk
  • 1 tsp (or more) cajun seasoning
  • 2 oz cooked salmon, flaked
  • ¼ cup shaved (or very thinly sliced) brussels sprouts*
  • S&P, as desired

Instructions

  1. Preheat oven to 425 degrees
  2. Spray a 4in ramekin with nonstick spray
  3. Whisk together eggs, milk and seasoning
  4. Mix in flaked salmon and brussels sprouts
  5. Pour into ramekin
  6. Bake for ~ 15-20 minutes or until set
  7. Serve with fresh fruit or a garden salad
