What’s better than starting off a fall morning with a sweet and healthy stack of apple pie pancakes drizzled with salted caramel peanut butter?! That salty and sweet flavor profile is the best way to kick off a cool fall day!

PANCAKES
  1. 1/4 cup almond flour
  2. 1 tsp coconut flour
  3. 1 tsp apple pie spice
  4. 1/2 tsp baking powder
  5. 1 large egg
  6. 1 tbs unsweetened apple sauce
  7. 1 tsp coconut oil
  8. 1/4 tsp vanilla extract
  9. liquid stevia, if desired
TOPPING
  1. 1 tbs salted caramel peanut butter
  2. Apples, spiralized or sliced
  3. cinnamon
  4. xylitol
  5. 1 tsp brown butter
Instructions
  1. Mix together all pancake ingredients
  2. Heat skillet over medium heat
  3. Cook in desired size
  4. For top, add spiralized or sliced apples to pan with butter
  5. Sautee
  6. Add in cinnamon and xylitol
  7. Cook until just al dente
  8. Stack pancakes, drizzle with peanut butter and finish off with cinnamon apples
