Can’t stop, won’t stop! ? Can you just hear me singing about all things pumpkin right now? Don’t worry, I will be getting in a delicious dose of apples too! I mean, it is fall, right? Until then, this simple recipe is perfect for breakfast, snack or even dessert! And those big oat clusters….yum!

Instructions

  1. Preheat oven to 325 degrees
  2. Line baking sheet with parchment paper
  3. Mix together dry ingredients: oats, flax, cassava flour and cinnaspice
  4. Melt coconut oil and then mix in peanut butter and honey
  5. Combine wet and dry ingredients
  6. Mix until evenly coated
  7. Spread granola on baking sheet
  8. Bake for ~20 minutes
  9. Give it a good stir
  10. Bake for another ~15 minutes or until golden
  11. Allow to cool slightly and toss in white chocolate chips if you’d like them to melt into your granola OR wait until it is fully cooled and toss
  12. Store in a sealed container

Notes *sub gluten free, if needed
**use whole wheat or favorite gluten free flour
***can sub with cinnamon or pumpkin pie spice, but only use 2tbs
