White Chocolate Pumpkin Spice Peanut Butter Cups

Tis the season for all things pumpkin!! And of course, it wouldn’t be pumpkin season without celebrating with both fresh pumpkin and some of my favorite flavored nuts ‘n more! These quick peanut butter quick are a healthy explosion of flavor and a very delicious way to celebrate the season!

White Chocolate Pumpkin Spice Peanut Butter Cups

Serves: 20 cups
Ingredients
Instructions
  1. Lay out 20 mini cupcake liners
  2. Combine white chocolate and coconut oil and melt in microwave
  3. Take half of white chocolate and divide evenly between 20 cups
  4. Place in fridge to set
  5. Mix together pumpkin spice peanut butter, fresh pumpkin and any additional sweetener
  6. Drop 1 tsp pumpkin peanut butter mixture onto top of each of 20 white chocolate bottoms
  7. Divide the remaining white chocolate on top of the pumpkin filling
  8. Place the peanut butter cups in the refrigerator for 2-3 hours to set
  9. Enjoy!

*can sub out canned pumpkin (not pie filling)
