Sweet & Savory Breakfast Hatch Chiles

So, I will admit. I never had a hatch chile until last week! If you follow me on Periscope, then you probably saw me go live with my amazing box of produce I ordered from Melissa’s. Since I had been seeing hatch chiles all over instagram, of course, I had to jump on the train and toss some into my cart! I had to find out what all the hype was about! Most of you know that I am not a fan of anything hot or spicy. Someone told me hatch chiles were mild, so I was all on board. Well, come to find out they actually range in spiciness from mild to hot….apparently my batch was HOT!!! Eeeek! But, I found by roasting them and stuffing them with some flavors that offset the heat, that they work really, really well! Even, delicious, I may add!

Recipe type: Breakfast
Serves: 2 peppers
  1. Roast hatch chiles in oven or over grill flame
  2. Add ground meat to pan and saute
  3. Remove from pan
  4. Scramble egg
  5. Cut peppers length wise and remove seeds
  6. Evenly divide ground meat, egg, goat cheese and mango between 2 peppers
  7. Finish off with cracked black pepper
