Happy Monday! I hope you had a great weekend! I have been visitng my sister in AZ and it has been HOT! Not, that I am complaining since it has been so chilly back east lately! 

Today, I am sharing another sweet and savory breakfast recipe that is very quick and easy to prep in advance and make whenever you have a craving! Plus, this sausage patty is a great healthy alternative to any fast food restaurant!

Sweeten up your morning breakfast with this tasty twist on a fast food favorite!

Ingredients
  1. 1 english muffin
  2. 1 large egg
  3. 1.5 oz 5280meat chorizo
  4. 1 tsp Essentially Coconut Sweet Almond Butter
  5. 1 small apricot (can sub applesauce if preferred)
Instructions
  1. Dice or mash up apricot (can use a puree if preferred)
  2. Mix apricot with chorizo
  3. Add in essentially coconut (or coconut butter of choice)
  4. Shape into a patty and cook over medium heat until cooked through
  5. Place english muffin in toaster over
  6. While english muffin is cooking, cook your egg, as desired
  7. Place chorizo patty on top of english muffin and finish off with your cooked egg
  8. Serve with a side of fresh fruit
