Happy Monday! I hope you had a great holiday weekend! I was a bit under the weather this weekend, but still managed to cook an amazing dinner yesterday for my family! Nothing beats a nice piece of lamb and some veggies! Now that we are into the full swing of spring, a simple and fresh Blueberry Lemon Breakfast Skillet Cake is the perfect way to start the week! A sweet, yet healthy baked skillet cake that can be eaten any time of day!

  1. 1 cup Lemon Stack'd Pancake Mix
  2. 1/2 cup Xylitol (or dry sweetener of choice)
  3. 1/2 cup MuscleEgg Vanilla Egg Whites
  4. 1 container Lemon Elli Quark
  5. 1 cup blueberries
  1. Pre heat oven to 350 degrees
  2. Mix together all ingredients except blueberries
  3. Gently fold in blueberries
  4. Pour batter into a greased cast iron skillet (or any oven safe pan)
  5. Bake for ~30-40 minutes or until toothpick comes out clean
  6. Serve with additional quark, blueberries and lemon zest on top
