Sweet Potato, Goat Cheese, Onion & Spinach Melt

Happy Friday! I hope you had a great week! It has been kind of gray and gloomy here the last few days! So comfort food has been on my mind! Plus, for many of us it is the Lenten season and we are not eating meat on Fridays! So, what better way to enjoy some comfort food…meat free than with this veggie packed sandwich!

Sweet Potato, Goat Cheese, Onion & Spinach Melt

Sometimes a good, veggie stuffed sandwich is all you need to keep you fueled!

  1. 1 roll of choice
  2. 2 tbs mashed sweet potato
  3. 1 oz goat cheese
  4. sliced red onion
  5. handful spinach
  6. cracked black pepper
  1. Preheat oven to 425 degrees
  2. Slice roll in half
  3. Spread mashed potato on one side and goat cheese on the other
  4. Layer in onion and spinach
  5. Wrap in foil and bake for ~20 minutes or until cheese is meslted
