Happy Monday! I hope you had a great holiday weekend!! For all of you who still have some left over sweet potatoes lying around (I know I always have plenty on hand), this recipe will be perfect! Not only is it quick and easy, but it is very tasty!! I hope you have a great last few days of 2014!!!

  1. 1 cup oat flour
  2. 1/2 cup coconut sugar (can sub brown sugar)
  3. 1 tsp baking powder
  4. pinch salt
  5. 2 eggs
  6. 6 tbs (72g) Sweet Spreads Cinnamon Roll CocoNutter, melted
  7. 1 cup pureed sweet potato
  1. Pre heat oven to 350 degrees
  2. Spray baking pan with non stick spray
  3. Whisk together dry ingredients
  4. Mix together wet ingredients
  5. Combine wet and dry ingredients
  6. Pour batter into the pan
  7. Bake for ~22 minutes
  1. Nutrition: 1 out of 16 bars
