So, I thought I would start sharing some yummy and healthy recipes that would be the perfect addition to your holiday spread! These bars are not only tasty, but also quick and easy! I hope you enjoy! Ingredients
  1. BASED/TOP
  2. 140g (1 cup + 2tbs) FlapJack Buttermilk Pancake Mix (or oat flour)
  3. 1/4 cup dry sweetener of choice (I used Xylitol)
  4. 1/4 cup coconut oil, melted
  5. pinch salt
  6. MIDDLE
  7. 1/4 cup Chobani plain greek yogurt
  8. 1/2 cup mashed sweet potato
  9. 1 large egg
  10. 1 tsp pure vanilla extract
  11. 2 tbs coconut flour
  12. 2 tsp ground cinnamon
  13. 1/4 cup sweetener of choice
  14. 2 tbs crushed pecans
Instructions
  1. Pre heat oven to 350 degrees
  2. Mix together base ingredients
  3. Press 3/4 mixture into the bottom of parchment line baking pan (5x7in)
  4. Add all middle ingredients of a blender (or hand mix very well)
  5. Spread mixture evenly over base
  6. Crumble remaining base on top of sweet potato mixture
  7. Sprinkle with pecans
  8. Bake for ~40 minutes
