Seared Scallops with Mashed Cauliflower

Happy Monday! I hope you had a great weekend! ๐Ÿ™‚ Today’s recipe was one that I randomly posted on my instagram page a couple weeks ago. I had so many requests for the mashed cauliflower recipe that I figured I should share it with everyone! Topped with some pane seared SizzleFish Scallops, this quick meal is the perfect balance of protein, veggies and deliciousness! ๐Ÿ˜‰

Seared Scallops with Mashed Cauliflower

A quick, protein packed recipe that is loaded with flavor!

  2. 3/4 cup cauliflower (no stems)
  3. 1/3 cup milk (more or less depending on your desired consistency)
  4. 1 tsp ghee
  5. seasoning of choice (I used a roasted vegetable spice blend)
  6. -------
  7. 4oz Sizzle Fish Scallops
  1. Put cauliflower into blender and pulse until looks like rice
  2. Heat a non stick pan over medium heat and saute cauliflower until golden
  3. Add cauliflower, ghee, milk and seasoning to blender and puree
  4. Sear scallops as desired
  5. Top mashed cauliflower with seared scallops
  6. Serve with steamed spinach
  1. Nutrition: for entire serving
