TGIF Friends! I hope you had a fabulous week! I thought I would send you into the weekend with this delicious, mouth watering muffin recipe! These muffins came out absolutely perfect! They would make a great addition to your Sunday brunch! Or perfect to pack for a quick snack or grab for an on the go breakfast during the busy week!

  1. 1/4 cup (60g) fresh fig meat or fig puree
  2. 3 large eggs
  3. 2 tbs (28g) coconut oil
  4. 2 tbs (28g) Sweet Spreads Cinnamon Roll CocoNutter
  5. 1/2 tsp pure vanilla extract
  6. 1/4 cup (28g) coconut flour
  7. 1/2 tsp baking powder
  8. 1 tsp vietnamese cinnamon
  9. pinch salt, optional

Instructions

  1. Pre heat oven to 350 degrees
  2. Line 6 muffin cups with paper liners or spray with non stick spray/coconut oil
  3. Melt your coconut oil and butter together in a bowl
  4. Mix in your fig meat and vanilla extract
  5. Whisk in your eggs
  6. Sift your dry ingredients to your wet
  7. Mix until just combined
  8. Evenly divide batter among muffin cups
  9. Bake for ~30 minutes or until set
