Happy Friday! I hope you had a great week! Now that fresh cherries are in season (one of my favorite fruits!), this easy cake recipe is the perfect way to use them! It is light, yummy and packed with healthy ingredients! I hope you enjoy! Have a great weekend! 🙂

Ingredients
  1. 1 1/2c (164g) almond flour
  2. 3 tbs (21g) flax
  3. 1 tsp baking powder
  4. 1 large egg
  5. 1/4c coconut oil (or oil of choice), melted
  6. 1/4c milk
  7. 3-4 tbs honey (depending on how sweet you'd like it)
  8. 1 1/2 tsp almond extract
  9. 1 tsp vanilla extract
  10. 1c (140g) diced cherries
Instructions
  1. Pre heat your woven to 350 degrees
  2. Whisk your dry ingredients together
  3. Mix your wet ingredients
  4. Combine your wet and dry ingredients
  5. Spray a 8-9in cake pan with non stick spray
  6. Pour batter into pan
  7. Bake for 28-32 minutes or until just set
  8. Allow to cool before slicing
