Happy Monday! I hope you had a great weekend! We had some AMAZING weather here this weekend! I can’t even believe it! It feels like summer might have finally arrived! I am keeping my fingers crossed! ๐Ÿ™‚ With the warm weather also comes a much lighter appetite for me too! This recipe is the perfect, light way to start your day! I hope you enjoy! Ingredients
  1. 1/4c (30g) roasted sunflower seeds
  2. 1 tbs (10g) hemp seeds (or more sunflower seeds)
  3. 1.5tsp (3g) ground flax
  4. 1 tbs (7g) coconut flour
  5. 2 large eggs
  6. 1.5tbs (22g) ghee
  7. salt, to taste (I did not use any)
Instructions
  1. Pre heat your oven to 350 degrees
  2. Spray a donut/bagel pan with non stick spray (or coat with coconut oil/ghee)
  3. Add your dry ingredients to a food processor until sunflower seeds are gently broken down
  4. Whisk together your eggs and melted ghee (make sure ghee isn't hot when adding eggs)
  5. Combine your wet and dry ingredients
  6. Divide batter evenly among 4 donut molds
  7. Bake for ~12 minutes or until set
  8. Allow to cool
  9. Enjoy cold or toast for a crispier bagel

    I'm not sure if my appetite changes with the weather, but I know my ATTITUDE toward cooking sure does. :) (I don't want to come in from outside to cook, so I grill a lot.) Quick question about ground flaxseed: Is it preferable to buy whole flaxseed and grind it yourself or is it just as nutritionally beneficial to buy pre-ground flaxseed?

        I freeze a portion of the ground flax I purchase. Do you think that's a good idea? (Sounds like you don't.) I wonder if freezing it can cause it to lose its potency?

  • Well, I don't have any of the ingredients or a lot of them BUT man these look amazing!!! I love bagels!!!! Pumpernickel & pump/rye combo are my faves!
