Happy Friday! I hope you had a great week! Today I am sharing a delicious recipe with you that I submitted for a contest over at Anna’s website, Protein Pow!! The challenge was to come up with any protein powder pancake recipe….and this one made my taste buds sing! 😉 They were loaded with flavor and so fluffy!! I hope you enjoy the recipe!   1. 1/2 scoop vanilla whey (14g)
  2. 2 tbs (14g) coconut flour
  3. 1 tsp baking powder
  4. 5-6 small pretzels, crushed (more for top, if desired)
  5. 2 large eggs
  6. liquid stevia, to taste
  7. 1 tbs (16g) PB Toffee Crunch Nuts N More
  8. 1 tsp honey
  1. Sift together protein powder, coconut flour and baking powder.
  2. In a second bowl, whisk eggs and stevia.
  3. Combine wet and dry ingredients.
  4. Fold in crushed pretzels.
  5. Heat skillet over medium heat.
  6. In tablespoon servings, drop batter into pan and cook for 3-4 minutes or until bubbles appear.
  7. Flip and cook an additional 2-3 minutes.
  8. Repeat until all batter is gone.
  9. Stack pancakes on a plate, drizzle with honey and PB Toffee!

  • HOLY YUM!!!!!!!!!!!!!!! I might try these with some egg whites & maybe 1 egg.. or all egg whites.. :) It is similar to the ones I am making now from Laura so I am sure I will love! Now to find that nut butter here! :)
