Happy Thursday! I hope you are having a great week! I know you are all shocked to see me share a recipe on a Thursday! But, it’s the 21st of the month and you know what that means…….It’s Recipe Redux Day! :)

 For those of you who aren’t familiar with Recipe Redux it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! This months challenge was to create a DIY kitchen recipe that is easy, healthy and would make a great gift for the holiday season! This delicious granola recipe definitely fits that! Quick, easy, healthy and looks gorgeous all wrapped up in a holiday jar with a bow!! Plus it has all the warm, sweet flavors of the holiday season too! I hope you enjoy this recipe! Cranberry Pecan Granola 2

Fit Ingredients

  • 1 c (80g) oats
  • 1/2 c (48g) pecans, rough chopped
  • 2 tbs (14g) slivered almonds
  • 2 tbs (7g) reduced fat shredded coconut
  • 1/2 tbs pure vanilla extract
  • 1/3 c (40g) dried cranberries
  • 1 tsp ground cinnamon
  • 1 large egg white
  • 3 tbs maple syrup (I used Sugar Free)
  • 1/8 tsp maple extract, optional
  • 2 tbs stevia powder (or sweetener of choice)

  • baking sheet
  • parchment paper

Directions

1. Preheat your oven to 325 degrees.

2. Line your baking sheet with parchment paper.

3. Mix together all of your ingredients in a bowl.

4. Spread granola mixture evenly on a baking sheet.

5. Bake for ~ 25 minutes.

6. Toss with a spatula.

7. Bake for an additional ~10 minutes or until golden.

8. Store in a sealed jar or container.

This granola was the perfect recipe for some quick and healthy holiday gifts! I made several large batches, sealed them up in some mason jars and put a holiday ribbon on then! I will be sending them to some friends and family for the holidays!

    Do you have a favorite holiday recipe to give as a gift? My mom makes this stuff called avalanche bark made of rice crispies marshmallow chocolate chips and peanut butter. It's probably not very healthy, but it's delicious! What is your favorite flavor granola? Any i'm not picky when it comes to granola Will you be giving the gift of food this season? I hope so xP

  • I am loving all of the recipe redux recipes I’m seeing this month. Yours looks delicious of course too! Love the sound of pecans and cranberries together and definitely makes me think of Christmas!
