Happy Monday! I hope you had a great weekend! Although I spent most of mine working, I did get a lot accomplished! On top of that we are having amazing weather here! High 60’s, low 70’s and tons of sunshine! It doesn’t get better than that! My favorite kind of weather is the “jeans and hoodie” type of weather! So comfy and relaxing! πŸ™‚

Besides my total addiction love for almonds, I also have a BIG love of pecans! It’s probably my second favorite nut! I have been eating Artisana Raw Pecan Butter almost every night before bed and as much as I love it, it is darn expensive! So, I knew I had to find a cheaper way to enjoy the same nightly treat! The result, this amazing fall inspired nut butter! It is definitely MUCH cheaper and so much tastier with the spices added in! I hope you enjoy it! Have a great Monday! πŸ™‚

Fit Ingredients

  • 2 c (240g) raw pecans
  • 1 tbs (14g) coconut oil, melted
  • 1 tbs pumpkin pie spice (adjust to desired taste)
  • Sweetener, optional (I used 5 drops of liquid stevia)

  • food processor

Directions

1. Throw all your ingredients into the food processor and let it go!! πŸ™‚ It should take about 5-7 minutes.

2. Store in a sealed jar in your refrigerator.

Easy as that! This nut butter is raw, which makes it a bit chunkier than a smooth nut butter. However, it does still spread and tastes a trillion times better than any store bought nut butter…and cheaper too! πŸ™‚ Can’t complain about that! I just take my spoon and dive all in! πŸ˜‰

    Mmmm, I looooove pecans. I have never tried pecan butter because of the price, but I need to make this for sure! Love the idea of adding pumpkin pie spice to it :). Now I just need to get a new food processor; mine broke!!!

  • OMG! I need a food processor! I WANT THAT!! LOVE pecans & the addition of the coconut oil & pumpkin pie spice - holy yum!!!! So glad you had great weather & I hope you got some fun in it! We were hot BUT we managed to find coolness & R&R! Liking that! Me remake anything - nope but I will if I get a friend to post a great recipe! :)

  • I have never thought of trying pecan butter, but I'm actually headed to TJ's to pick up some goodies for a slow cooker recipe and pecans sound delicious. The weather was muggy here in Houston and not too much sunshine, but a good and way too quick weekend.
