Happy Monday! I hope you had a great weekend! I worked on Saturday but had a productive and relaxing Sunday! It was great! I know we are not officially into fall yet, but I just couldn’t hold out on sharing this recipe with you any longer! I have been eating pumpkin for the last few months, so the pumpkin recipes are abundant! πŸ™‚ I figured since we are 9 days into September now it was OK to start sharing them with you! πŸ˜‰ I hope you enjoy! Fit Ingredients

  • 1/2 c (56g) coconut flour
  • 2 scoops (60g) cinnamon protein powder (or vanilla/unflavored)
  • 1 tbs ground cinnamon
  • 1 tbs pumpkin pie spice
  • 1 tbs baking powder
  • 1c (244g) canned pumpkin (not pie filling)
  • 1/2 c + 3tbs (230g) liquid egg whites
  • 1 tbs pure vanilla extract
  • 1 tsp liquid stevia (adjust to desired sweetness)
  • 1/4 c (56g) chocolate chips/cacao nibs (add more or less)*

*I only used a few for just a hint of chocolate. If you really want to amp up the chocolate chips I would say 1/2c would be the way to go!


  • large loaf pan
  • parchment paper



1. Pre heat your oven to 350 degrees.

2. Line your loaf pan with parchment paper.

3. In a bowl, sift together your dry ingredients; coconut flour, protein powder, baking powder, cinnamon and pie spice.

4. In a second bowl, mix together your wet ingredients; pumpkin, egg whites, sweetener and vanilla.

5. Combine your wet and dry ingredients. Mix until just incorporated.

6. Fold in your chocolate chips.

7. Bake for 50-55 minutes or until a toothpick comes out clean.

8. Allow to cool before slicing.

Chocolate and my favorite fall flavors together?! Absolutely delicious!!! There isn’t a better way to kick off the fall baking season than with this easy to make and healthy bread! It packs great for work too! I brought in the remaining loaf for some co workers and it was a hit! πŸ™‚

  • Ohh my goodness. I'm definitely making this this weekend! I'm a diehard pumpkin lover - it's never too early for pumpkin! (although I did see "Winter Wonderland" ice cream on sale at my grocery store ... in Texas ... this weekend, and I think THAT is a little early!)

  • Ahh that bread looks delicious! I've never tried cinnamon protein powder but I may have to get some just for this. In my opinion, pumpkin is acceptable starting September 1, mostly because August reminds me of hot, humid summer weather. As far as workout songs, I've enjoyed working out to Holy Grail, especially with interval training because it starts slow and gets faster.
