Happy Monday! I hope you had a great weekend! We had some crazy (and pretty disgusting) weather this weekend. The sunny forecast turned into a rainy and humid mess! That left me to do two things (because it was WAY TOO HOT to bake)…..head to the movies and spend lots of time relaxing and reading! Can’t complain about a weekend like that, can you? With all the craziness going on right now (that I promise to share soon ;)) the relaxation was definitely needed!

One of the things I crave when it is hot is fresh berries! A few weeks ago I had a major craving for a blueberry pie! Of course that craving struck me at 8:00pm, so I wasn’t about to start baking a pie at that hour. I did the next best thing….I created this super easy blueberry ‘pie’! This recipe would work amazing with any berry or fresh summer fruit! I hope you enjoy! 🙂

Fit Ingredients

  • 3/4 c (105g) blueberries
  • 1 1/2 tbs (9g) chia seeds
  • 1/2 c (113g) greek yogurt
  • 1 tbs (7g) vanilla protein powder
  • lemon zest
  • sweetener, to taste

  • 4 inch baking dish/pie pan

********************************************

Directions

1. In a bowl combine your blueberries, chia seeds, sweetener (if using) and lemon zest. Allow to sit for 20 minutes.

2. Pre heat your oven to 350 degrees.

3. Combine your greek yogurt and protein powder.

4. Spray your baking dish with non  stick spray.

5. Pour your blueberry/chia mixture into the dish.

6. Spread your yogurt on top.

7. Bake for ~ 15-18 minutes or until the top is set.

8. Eat hot or cold.

This way just like eating blueberry pie, but without the crust!!! The blueberries were thick and jam like from the chia seeds!! I enjoyed this for dessert 2 nights in a row. I tried it hot and cold and preferred it cold! Then again, I am not a fan of any hot foods in general! haha Either way, it is amazing and the perfect way to kill a craving for sweets…and pie! 😉 It is even healthy enough for breakfast too!

  • Oooo this looks delicious! I don't have any blueberries, but I do have cranberries. Will have to give it a try. Let's hope the man doesn't try and take a bit, i may have to slap his hand and tell him to get his own :) Ha Ha!

  • I AM ALL OVER THIS!!!! Friggin want now but will have to wait till later! :) I will eat this as a mini meal & split it up for a little after dinner treat! I cant wait!!! I will use my lemon stevia since I don't have lemon zest. :) We ended up seeing my stepdaughter yesterday & it was very nice! You already know my Saturday.. Damn that friggin weather for you but at least we got this out of it! ;)

  • WOW! Funny how sometimes I stumble upon the BEST finds in the wildest of ways... I won't delve into THAT but I will say this: AMAZING! This is such a unique and inventive way to combine all of this deliciousness and protein/fiber packed finds into a DESSERT that I know would satisfy even the biggest "health food" critic! ;-) Pinned and awaiting my arrival at my new apartment when I can get me some cute little baby pie tins that I'll actually have a use for now!

    If only I could find a personal size baking dish! This would be breakfast tomorrow. I can't believe I've had no such luck at home goods, Ross, Marshall's... And I am so not spending the dough at Williams Sonoma =P This dish is encouraging me to continue my hunt!

  • I kid you not, my "step two" after reading blogs this morning was going to be "look up blueberry recipes." Guess who just helped me MULTITASK like a pro?? I'm still hit-or-miss on chia recipes, but I love the combo of flavors/ingredients here and it just looks so pretty!
