Honey Pumpkin Cashew Scones

Happy Friday! I hope you are ending the week on a good note and have some exciting plans for the weekend! After the monsoons that many of us have been experiencing over the last few days, it will be nice to (so the weather man says) have some nice weather again! If so, you can bet that this girl will definitely be outside! 😉

As promised on Monday, I have a second honey recipe to share with you! For those of you who missed the post Monday, just a little background about this recipe…..

About a month ago the Recipe Reduxers were given an (optional) challenge to create some delicious recipes using honey for the National Honey Board.  The challenge was to use honey in a recipe to show how it can be used in any dish, sweet, savory, salty, bitter, etc. Of course, you know I would go the sweet route ;)

Some of the great benefits or ways to use honey include:

1) Adds balance to a dish

2) Helps to retain freshness and moisture

3) Helps to balance out the bitterness of gluten free flours (which is what it did here!) ;)

4) Mixes well to create sauces, dressings and marinades

5) Is a great sugar substitute!

6) Has an amazing flavor! :)

Fit Ingredients

  • 1 c (112g) cashew flour (purchased on nuts.com)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 c (122g) pure pumpkin
  • 1 large egg
  • 1 tbs (21g) honey, divide


  • baking sheet
  • parchment paper



1. Pre heat your oven to 400 degrees.

2. Line your baking sheet with parchment paper.

3. In a bowl combine your dry ingredients: cashew flour, baking powder and cinnamon.

4. In a second bowl mix together your egg, pumpkin and 10g (1.5 tsp honey).

5. Mix together your wet and dry ingredients.

6. Form the dough into a circle (or whatever shape you’d like) on the parchment paper.

7. Bake for ~20 minutes.

8. Remove from the oven and slice into 6 pieces.

9. Return to the oven and bake for an additional 5-10 minutes (if you’d like a slightly crisper edge)

10. Allow the scones to cool.

11. Drizzle with the remaining honey.

12. Serve! 🙂

These scones have the perfect balance of sweetness! Just enough to make them feel decadent!! They were soft in the center and slightly crisp on the edge! Such a great way to start off my morning…..or on a couple of occasions, end my day! 😉

  • If you don't have cashew flour, can you just use regular whole wheat flour? These look scrumptious and a perfect way for me to use up that pumpkin can that is staring at me in my fridge. :) The sun is trying so hard to come out right now! Enjoy the weekend!

  • Ooooo that looks divine, Sarah! I love anything that involves cashews. My favorite scone flavor is pumpkin or blueberry. I unfortunately got hit hard with rain (boo). I am hitting the beach this weekend! I hope you enjoy your weekend as well!

  • Well, I don't have a lot of these ingredients. :) I do love that your recipes mostly do NOT need a mixer or blender since I don't have! :) Yahoo for weekend weather for you & we will be good too! BUSY one for us with gatherings both days for a stepdaughter bday & Father's day... BUSY!!!!
