Happy Friday! I hope you have had a great week! On Monday I mentioned having lost my voice on Sunday. My beautiful friend Jody told me to make sure to get lots of rest because for her that usually meant a cold was coming. Well, she couldn’t have been more right! By Tuesday morning I felt like a truck ran over me πŸ™ I thought maybe some yoga would do me good, but let’s just say it ended up being a very painful 75 minutes! Needless to say, I have spent the rest of the week nursing this cold, which is why I have been M.I.A the last few days (well at least on IG and Twitter). I haven’t had a cold since March of 2012, so I guess it was my turn to get one! You can bet that this weekend will be filled with lots of rest, movie watching and hot tea! Make sure to get outside for me and enjoy some sunshine and exercise! πŸ™‚

But before I bring myself back to my bed with a big box of tissues, I want to share this delicious recipe with you! I hope you enjoy! πŸ™‚

Golden Berry & Pepitas Bars 3

Fit Ingredients

  • 3/4 c (105g) all purpose baking flour (I used this one)
  • 1 tsp baking powder
  • 1/4 tsp ground ginger
  • 1 large egg
  • 1/4 c (56g) greek yogurt
  • 1/4 c (61g) apple sauce
  • 1/2 c milk of choice
  • 1/2 tsp liquid stevia (adjust to desired sweetness)
  • 1/2 tsp orange extract
  • 1 tbs orange zest
  • 1/2 c (60g) golden berries, rehydrated
  • 1 tbs (8g) pepitas (pumpkin seeds)

Directions

1. Pre heat your oven to 350 degrees.

2. In a bowl combine your wet ingredients: egg, yogurt, applesauce, milk, stevia and orange extract.

3. Mix in your flour, baking powder and ginger.

4. Fold in your golden berries.

5. Divide batter evenly between 2 pans.

6. Sprinkle with pepitas.

7. Bake for ~ 30 minutes or until slightly golden.

8. Slice on the diagonal.

These bars are loaded with sweet flavor!!! Orange, golden berries and the crunch from the pepitas….delicious! These are much healthier and tastier than any pre made energy bar! I ate mine before my yoga class and it was the perfect amount of food to power me through! Plus, we all know how I love those grab and go snacks! πŸ˜‰

        ok, just didn't know if golden berries were something I had never heard of but I guess any kind of dried fruit will work.

  • Yum! I have been seeing Goldenberries more often but haven't tried them. Similar to raisins no? My son loves Pepitas and actually stuck one up his nose a few months ago. Luckily he blew it out a few hours later! So now when he eats them he says, "Pepipita (what he calls them) in nose?" NO!!!!

  • Awwwww, I did not want to be right about that but my colds always start with my throat hurting like no tomorrow! :( Rest & get some sunshine to make you feel better!!! HUGS!!!!! This is a cool recipe - very interesting but will have two wait for you to make for me. ;) I want you, me & Laura from sprint2theTable to get together & you both cook for the old lady - me! :) Well, I got that stupid flu twice - once on my bday last November, the no energy, no appetite one & then the cold one in early 2013. I am so done with sick! ;) Hope to just get out & enjoy our perfect weather this weekend. Supposed to be mid 70's. GET BETTER!!!!

  • Aww, I hope you're feeling better, lovely lady! Lots of liquids, soup and rest--and yup, movie-watching :) These bars look dense and delicious--What are golden berries? Different from golden raisins?

      • Woah, I had no idea! As in, I've had yellow raspberries (fresh) a few times, but never see them in baking/recipes. Will keep an eye out for dried ones. Or on-sale fresh ones...but I'd probably just snack on those, fresh berries are too hard to save and actually cook with ;)
