Happy Friday! I hope you’ve had a great (short) week! πŸ™‚ I am so excited for the weekend because we are finally going to have some true summer weather, which means one thing……the beach! πŸ™‚ If you’re like me, you always make sure to hit the beach with a cooler full of healthy snacks! Fruit, yogurt, nuts, crackers…….. πŸ˜‰ but I can never seem to find any crackers I like that are made with clean ingredients and aren’t full of sodium! So, in order to solve that problem, I decided to make my own!!! These reminded me of the Go Raw snack crackers in size, shape and texture…..only these aren’t made with flax! These will make the perfect snack to pack for that beach trip this weekend….or hike, or picnic! πŸ™‚ I hope you enjoy!

Fit Ingredients

  • baking sheet
  • non stick spray

Directions

1. Preheat your oven to 350 degrees.

2. Spray your baking sheet with non stick spray.

3. Combine all of your ingredients in a bowl.

4. Mix.

5. Using a teaspoon, spread your mixture on the cookie sheet into little circles.

6. Bake for 10 minutes.

7. Flip the crackers and bake for an additional 10-15 minutes or until golden and crisp.

8. Store in an air tight container.

These were soooo delicious! I dipped them in some fresh mashed avocado one day and then lemon hummus another and they definitely hit the spot! I made a huge batch the second time around because I loved them so much! They are perfect for when you need a quick healthy snack! The kids would love them too!! Just throw some in a ziploc and send them off to school!

    Impressed. I don't have oat bran...would rolled oats work? Thanks. Love the idea of mashed avocado or hummus on them. Good to toss them into a salad to add a grain component to a meal also.

  • Dang! I would never of thought this recipe would literally only be three ingredients. So simple!! p.s. You MUST make pancakes soon, but add a crumbled up quest bar in the batter. So good!!
