Happy Monday! I hope you had a great weekend! Luckily the monsoon rain we were ‘enjoying’ on at the end of last week finally let up yesterday and we had some beautiful sun! Good thing I had plans to spend all afternoon in the kitchen! πŸ˜‰

I don’t know about you, but I think we are in need of a savory dish today! We have been enjoying our sweets quite a bit and a change was in order! (It’s all about the sweet and savory balance ;)) Plus, this recipe is extremely simple to throw together. I got all the ingredients set, popped it into the oven while I showered and it was done! Don’t make the morning any easier than that! I hope you enjoy this recipe….and the rest of your Monday! πŸ™‚

Cheesy Baked Eggs 2

Fit Ingredients

  • 1 large egg
  • 3 large egg whites
  • 3/4c (90g) grated zucchini
  • 4g (just over 1 tsp) nutritional yeast (add more if desired)
  • 1/4 tsp onion powder
  • salt & pepper, to taste

  • 6in baking dish/cake pan
  • non stick spray/oil

********************************************

Directions

1. Pre heat your oven to 400 degrees.

2. Coat  your baking pan with non stick spray/oil.

3. In a bowl, whisk together your egg and egg whites.

4. Whisk in your nutritional yeast and seasonings.

5. Mix in your grated zucchini.

6. Pour into baking pan.

7. Bake for ~18 minutes or until just set.

8. Serve πŸ™‚

This egg dish was delicious! The nutritional yeast gives it a cheesy flavor (plus a boost of vitamins!) which is enhanced by the onion and black pepper! Plus you get a great serving of veggies in too! πŸ™‚

  • This looks good! I've made an omelette with these ingredients before minus the nutritional yeast but never thought of baking it. Great idea :)

  • I think you do a great job of balancing sweet and savory and it's even better when you combine the both. :) I've been eating a lot of zucchini lately and love roasting it and eating it as chips. So good...yeah for delicious spring/summer produce. Happy Monday!

  • Easy & looks delish! I am guessing easy to change up with different veggies if people wanted to do that! Is the yeast for the flavor or for fluffiness. I never have used it... I am sure mine would NEVER look like yours! :) 18 minutes - I barely am just starting tin the shower! ;) I would have to do mine before or after! :) WARM/HOT weather here but fine - we still enjoyed. I am much more a sweet than savory... THANK YOU AGAIN for the package! :)

  • I like a mixture of different recipe types. I love all the sweet recipes you share because they always include "fit" ingredients! But I wouldn't want that to stop you from sharing a recipe like the one today. Looks delicious--great idea with the inclusion of nooch!
