Happy Monday! I hope you had a great weekend! My weekend was definitely a good one! I enjoyed my inversions class yesterday despite the fact that it was not what I had expected. It was at a different studio than where I practice and took my last class. I still learned a few good tips though! We have also been enjoying lots of sunshine which has been so nice!

Today’s recipe is a spin off of some of the more recent bread recipes you have seen lately! I was craving a cinnamon raisin bread and had some extra sweet potato left over one day, so decided to put it all together into this delicious recipe! It was the perfect way to start my morning! I hope you enjoy! ๐Ÿ™‚

Fit Ingredients

  • 1/2 c (56g) coconut flour
  • 2 scoops (60g) vanilla whey protein powder (or egg white protein powder)
  • 1/2 c baking stevia or sweetener of choice
  • 1 tbs baking powder
  • 2 tbs cinnamon
  • 1 1/3c (322g) liquid egg whites
  • 1 c (200g) mashed sweet potato
  • 1 tbs pure vanilla extract
  • 1/2 c (80g) raisins (no sugar added)*

*can add more or less. I felt the bread could have used more

  • parchment paper

Directions

1. Pre heat your oven to 350 degrees.

2. Line your baking pan with parchment paper.

3. In a bowl whisk together your dry ingredients: coconut flour, protein powder, sweetener, baking powder and cinnamon.

4. In a second bowl vigorously mix your egg whites, sweet potato and vanilla until well combined.

5. Mix together your wet and dry ingredients.

6. Fold in your raisins.

7. Pour batter into the pan.

8. Bake for ~ 55 minutes.

As you know cinnamon and raisins are one of my favorite flavor combinations, so this soft, moist loaf got a big gold star from me!! It was loaded with sweet cinnamon flavor and chewy raisins! It was the perfect way to start off my day, plus get a fruit and veggie in one recipe! ๐Ÿ™‚ It is also amazing toasted and turned into a turkey sandwich for a bit of sweet and savory…..just saying ๐Ÿ˜‰

    ahhh your recipes are too good to be true! What is an inversions class? Also what is the difference between whey and other protein powders? I use sun warrior...what do you suggest?

  • I NEED THIS!!!!!!!!! I have the Ezekiel cinnamon raisin in the house right now & like you - love that flavor combo!!! SO EASY TOO!!! I love you for that!!!! My stats too!!! I can't wait to try & I hope I don't screw it up like I always so! :) No raisins in the house so... ;) No Cinco de Mayo for us BUT I crave my cookies on the weekend & got that Macaroon one I have been craving for a while! I wish I was starting out the day with this bread! :)

    Yummy looks super good!! You are going to kill me though LOL! If I don't use any sweetener or Protein Powder what would I change? I was bummed out because I found a sample pack of Jay Robb Egg white protein powders (chocolate and vanilla) and to me sadly they where HORRID!!! The smell and foamy deal I just could NOT handle :0(. So I am awaiting samples of Sunwarrior to come that I can try next. Oh well...try try until something works hehe.

  • I am having raisin issues at the moment (as in, I want to eat raisins 24/7 and there's not enough raisins in the world to keep up with demand - crazy cravings that stem from I don't know where) so this looks ah-maze-ing! I'm just about to whip up a bowl of oatmeal to start my day!

  • Okay, I'm a goon in that I love plain raisins but hate them in things, so I was just going to browse past this until I saw the suggestion of turkey on cinnamon sweet potato bread. I mean, that just...woah...yum...has to happen. Lost my ability to use words out of excitement there for a second ;) Just bought a big bag of good frozen turkey burgers from Costco, and they would be amazing between slices of dense sweet potato baked goodness! With a separate pile of raisins on the side ;D

    I have made this recipe TWICE now! So good!! Instead of raisins, I added craisins and pecans. Super yummy toasted and smeared with some homemade vanilla-cinn-almond&peanut butter!

    I made this on the weekend and it was a huge hit with the BF and my mom - my healthy recipe victims :) They were super easy to put together and smelt so good baking in my oven! Instead of a loaf, I decided to make muffins since they have built in portion control. Also used golden cane sugar instead of the baking stevia since that is what I had on hand. Another winner Sarah!
