Happy Sunday! I hope you are having a great weekend! We have been having the most amazing weather! It just puts me in such a great mood! Plus, it makes the weekend days all that much better! Today I will be taking my inversions class…..Don’t worry, I didn’t go out drinking for Cinco De Mayo last night! πŸ˜‰ But before I go stand upside down for the afternoon, I wanted to share with you this quick little recipe that I made the other day! I had a major craving for tacos after my workout, so I rushed home and pulled out a few ingredients and whipped these up! They tasted amazing and look gorgeous! Plus, they rolled around just in time for Cinco De Mayo! I hope you enjoy! πŸ™‚

Fit Ingredients

  • 2 – 6in baking dishes

Directions

1. Pre heat your oven to 400 degrees.

2. Place 1 tortilla in each baking dish. Push into the dish to form a bowl.

3. Bake for ~20 minutes or until crisp.

4. Mix together your cottage cheese and veggie pepper blend.

5. Divide the mixture evenly between both tortilla bowls.

6. Mix your beans and mexican seasoning.

7. Divide the beans evenly between both bowls.

8. Top with diced avocado and sliced cherry tomatoes.

9. EAT!! πŸ™‚

Are these quick or what? I mixed all the ingredients and chopped everything up while the bowls were baking! I would have added lettuce and salsa, but I didn’t have any on hand. They turned out sooo flavorful and definitely hit the spot! They made a perfect post workout refuel….with a glass of water, not a margarita! πŸ˜‰

    The weather has been amazing here!!! I enjoyed my run so much especially since my allergies did not act up! We did not go out....boring old married couple (im 25 and hes 29 ...so sad...lol) we rented silver linings playbook! Really good! Enjoy yout class!

  • LOVE Mexican food--love the "mini" idea. :) The frontier spices you listed sound nice, especially since they are "no salt". I don't mind having a little salt in a recipe, but I like to control the amount myself, and use my favorite sea salt. I'm going to Whole Foods today, and I know they carry Frontier products, so I'll have to look for these.

  • HI!!!!!!! Been running around today. Weather is yucky here so glad you have good weather there! Hope you had a fantastic yoga class - so adventurous! :) These are cute little taco bowls!!! I would skip the bowl & of course change a couple things - you know me! ;) I am not a fan of beans - boo on me! ;) Get some sleep!
