I want to thank you all for the birthday wishes on Friday (and those I received on Twitter yesterday)! The birthday excitement this weekend was low key, but very fun! I will give you a full update…with the food pics for this week’s WIAW! So stay tuned! Until then, you will have to enjoy this amazing recipe made with my favorite food….KABOCHA! This is probably one of the most simple recipes on the site! Not only is it easy, but it is soooo delicious! Then again, anything made with kabocha squash and /or peanut flour is amazing! Fit Ingredients

  • 1 c (200g) mashed kabocha flesh (cooked)
  • 1/4 c + 2tbs (45g) peanut flour
  • vanilla stevia, to taste (or sweetener of choice)
  • 1-2 tbs water or milk, if needed

Directions

1. Mix it all up in a bowl and SPREAD baby, SPREAD!!! πŸ˜‰

The consistency will be just like hummus…maybe I should have named it PB Kabocha hummus?! haha And let me tell you…..there aren’t even words to express how amazing this is!! I spread it on toast, rice cakes and then just ate the rest straight out of the bowl! How could you not for these nutrition stats!! πŸ˜‰ I may or may not have eaten the entire bowl in one day…just saying πŸ™‚

  • I have never had that squash - honest! I read about it all the time! :) I am not the biggest squash fan but I feel like I should try it. ;) NEED to order peanut flour! :)

  • This is SUCH a good idea!! I'm trying to find a good replacement for nut butters (they've been making my tummy hurt lately) so I'm totally going to try this with a little coconut flour :)

    AAAHHHHH!!!!!! I am baking a Kabocha later today oh yeah oh yeah (doing the Luvena dance...very dorky LOL). WHY did I not ever think of this. I don't have peanut flour but I do have PB2 will that work? Yes I have been watching the playoffs!!!!!!!!! My Warriors are going to game five as well! Suc a good game last night!     I love squash of all kinds but I've never had Kabocha. I don't think I've even seen it around here, but then there's a lot of awesome healthy foods I can't get here. Maybe next time I'm in one of the cities I'll have to track it down because all your Kabocha talk makes me really want to try it! Otherwise, the only playoffs I'm interested in start tomorrow, though my Canucks don't play till wednesday. Woo, so excited for hockey!

  • Yum, Sarah! this looks SO good. I actually do this with pumpkin puree as well and it's ahhhhhhhhmazing. I am a peanut flour monster - I use it in so many things. Currently my favourite thing to use it in is protein breakfast bakes or just mixing it through chobani with a dash of maple syrup.

  • Oh my, I've been obsessed with Kabocha Squash lately and this sounds amazing! Unfortunately with Paleo I can't do peanut flour... hmmm... I wonder if I could add Almond butter and a little almond flour? I might have to play around a little but will definitely give it a try! I bet it's great with fresh carrot sticks!
