PB & Jelly Cake 1

PB & Jelly Cake

Serves: 6

Happy Friday! I hope you have had an amazing week! For me, this week has been insanely busy, but awesome! Not only because I got to enjoy the Celtics/Knicks game Tuesday night AND celebrate the one year anniversary of Ingredients Of A Fit Chick with you on Wednesday, but……this Sunday is my birthday! Yes, yes it is!! I am a HUGE birthday person! I don’t know why I love them so much, but I do! Honestly, I enjoy celebrating other people’s birthday’s more than my own (ask the boyfriend about his banners, balloons and matching party napkins! haha)!

Not only is it MY birthday on Sunday, but it is also my sister’s birthday too! No, we are not twins. We have the same birthday, but she is 2 yrs younger than me! Crazy, huh?! My parents say she is the best birthday present I ever got! πŸ˜‰ Although, we won’t be celebrating together since she is in AZ, I want to send her a big HAPPY BIRTHDAY shout out!

In honor of our birthday (s) I decided to make ‘us’ a PB & J cake!! We are both HUGE peanut butter fans and well, what goes better with peanut butter other than chocolate (which I wasn’t in the mood for)….JELLY!! πŸ™‚ Oh Yes!!! PB & J cake!!! Nope, I didn’t frost the cake because I would rather enjoy a nice big bowl of froyo along side my cake! Frosting and froyo is overkill for me, but feel free to frost if you’d like!

You’re also probably wondering why I am posting this today and not on Sunday? Well, I am taking the weekend to enjoy my birthday and step away from the social network ‘sphere’ for a few days! But don’t worry, I will be back with another delicious recipe on Monday!!! I hope you enjoy this recipe and have an amazing weekend!!

PB & Jelly Cake 2

O.M.G!!! This is just like eating a PB and J sandwich! The peanut butter cake layers mimic that of soft, fresh bread and then you have the sweet berries in the middle that just melt in your mouth! It doesn’t get any better than this! It makes me feel like a kid again….a kid with extra protein that is! πŸ˜‰ This is so healthy you could literally eat it for breakfast too!

PB & Jelly Cake 5

Feel free to frost this if you’d like! I prefer to eat it like this…just like a sandwich! πŸ˜‰

  • HAPPY "early" BIRTHDAY! I absolutely love cake and love it with lots of sugary icing...I only actually really like pie with ice cream. :) Can you please just bring me over a slice of this cake? I hope you have a wonderful weekend and enjoy yourself. :)

Yum! This looks so good. I love anything with peanut flour, so I'll have to give this a try with blueberries! (And I seriously need to get some coconut flour!!) My favourite birthday cake changes from year to year, depending on what I've made recently and fallen in love with. Banana cakes and carrot cakes are always a winner though! Cake with icecream is good - but I'm odd and either like cake and icecream or cake and frosting - never all of the above?

Happy Early Birthday!!!!!!!!!!!!!! I hope you have a wonderful birthday weekend and spoiled, spoiled, spoiled :0). OMG this cake is perfect!!! I actually always scrap off icing, whipped cream, cream cheese, fondant whatever is spread on cakes. I prefer to eat just the cake fillings (my fav's are raspberry or bananas YUM). My mom is a cake decorator and I would always request a bread and filling only cake LOL!! Hey for my birthday's it's what I want that goes lol!! Have a great one girl!!!

I am totally a birthday nut as well! My birthday should be a national holiday and I expect all my loved ones to act accordinly by lavishing birthday wishes, presents and lots of free dinners. I LOVE cake so I have a few favourites - I will always have a soft spot for 'dirty' vanilla birthday cake (as I call it) from the local grocery store with the overly sweet and insanely thick icing, I also love a good lemon cake, or a strawberry cake. Chocolate cake and me are not friends. Most days I like living in Canada, but today not so much since I have yet to find any stores that sell peanut flour :( Your recipe looks so delicious and of course easy to make...stupid retailers preventing me from taste bud bliss. PS: Happy early Birthday!!

  • What a genius recipe!! I love it . . . and I'm always excited about recipes that use ingredients I already have, and have been tested with stevia instead of sugar already. (Whenever I try and swap it on my own, it's a disaster. Baking is not my forte.) Happy Friday--and Happy Birthday this weekend!! :)
    April 26, 2013
  • Oh em gee, this sounds absolutely amazing! I made PB&J cupcakes in the past and stuffed them with strawberry preserves and a light PB frosting... This reminds me of that but love the fresh fruit inside!
    April 26, 2013

    April 26, 2013
  • HOO BUDDY. You know how to celebrate a birthday! I expect you to mail me one of these for my next big day ;D PB&J is JUST my style. And of course a big ol' happy birthday to you! (And your sis.) Have a fabulous weekend, and enjoy your day in style!

  • OMG - bday for you!!!!!??? How young are you?? Probably young enough to be my daughter! :) I am so glad you are steeping away for the celebration! No Instagram too? Good for you!!!!! LOVE this recipe!!!! I need to order peanut flour still so I can make it! I think it sounds wonderful plain or with berries!!!! I might go blueberries though or even blackberries! :) HAPPY BDAY!!!!!!!!

    April 26, 2013
  • That is way too cool about you and your sister sharing a birthday. Did your parents buy you separate birthday cakes when growing up, or did you share them? I know for Justin & I we always had separate... Oh and of course I cannot leave a comment without telling you how delicious this cake looks! I will bookmarking it & insisting to Joshua that I want him to bake me it for my birthday in July!

MMM! I made this tonight!! Instead of raspberries, I made some jam with frozen organic berries and chia seeds for the filling and a little extra on the top (love mixed berries!) and garnished with some leftover peanut flour. Easy and delicious!! Thank you!!
