Happy Sunday! I hope you are having a great weekend!! I am really excited today because it is the 21st of the month and that means it is time to share this months Recipe Redux challenge recipe! Unfortunately I wasn’t able to participate last month, so it makes this month all that more exciting for me! For those of you who arenโ€™t familiar with this group, it is the first and only recipe challenge founded by registered dietitians. The Recipe ReDux is focused on taking delicious dishes, keeping them delicious, but making them better for you. It was founded by 3 amazing dietitians with a belief that healthier eating should always taste delicious. And let me tell you, I totally agree! This months challenge was Cupcake Conundrum!  While some people think the cupcake trend is over, others, like myself, will always be in love with cupcakes because I was a fan long before the trend began! For those of us who are over the crazy cupcake madness, we had a second option of making another hand-held dessert that might be a future trend. I didn’t have to think twice about making a cupcake.

When I trained for my first marathon I used to fuel up on cupcakes for a long run….literally. I would eat 1-2 massive cupcakes the night before a long run (I ran early at 5am the next day) The sugar and carbs from those cupcakes would energize my long runs like you wouldn’t believe! Until I hit the 14-15 mile mark and I would crash big time!!! At that point I reassessed my nutrition habits to things MUCH cleaner (haha) and proceeded on! I used to joke that I ran for my love of cupcakes! I know, you are shaking your head right now wondering how I could possibly ever think that eating 2 massive cupcakes in one sitting (weekly) was A) healthy or B) smart training fuel, right? Well, I knew it wasn’t, but I enjoyed it anyway ๐Ÿ˜‰ Luckily for me I smartened up before the cupcakes got the best of me! hehe ๐Ÿ™‚

Dark Chocolate Cupcakes 4

Fit Ingredients

Cupcakes

  • 1/4 c (28g) coconut flour
  • 1/4 c (20g) dark chocolate cocoa powder
  • 1 1/2 tsp baking powder
  • 2 large eggs
  • 3 tbs (46g) liquid egg whites
  • 1/2 c (113g) greek yogurt
  • 20 drops liquid stevia (more or less to taste)

Frosting

  • 3 tbs (42g) greek yogurt cream cheese
  • 1 oz (28g) goat cheese
  • 1/4 c (35g) Driscolls raspberries, mashed
  • 5-6 drops vanilla stevia

  • cupcake pan
  • paper liners

***********************************************************

Directions

1. Pre heat your oven to 350 degrees.

2. Line 6 cupcake cups with liners.

3. In a bowl whisk together your coconut flour, cocoa powder and baking powder.

4. In a second bowl, whisk together your eggs, egg whites, greek yogurt and stevia.

5. Combine your wet and dry ingredients.

6. Divide the batter evenly among 6 muffin liners (each should be filled about 1/2 way)

7. Bake for ~18-20 minutes or until toothpick comes out clean.

8. While cupcakes are cooling, mix together your frosting ingredients. *

*I mixed mine by hand, which leaves small lumps of goat cheese/cream cheese. If you want it completely blended then use an electric mixer.

9. Once cupcakes are cool, evenly divide the frosting between the 6 cupcakes.

10. Allow the cupcakes to set in the refrigerator for 30 minutes before serving (this will firm up the frosting).

Well, I think I have made my love of goat cheese and fruit very obvious on this site! ๐Ÿ˜‰ I mean we have this, this, this and this! And now we have THIS!! ๐Ÿ™‚ The deep dark chocolate cupcake is so soft and fluffy and when you get a small bite of the sweet, yet tangy goat cheese frosting….WOW!! Mouth heaven!! It is just an all around perfect flavor combination! And the boyfriend’s Uncle must agree since the boyfriend put them in the refrigerator at work to save one for after lunch and when he went back, his Uncle had eaten them all! Oh My! ๐Ÿ˜‰

For those of you who aren’t fans of goat cheese, you can sub in all cream cheese for a deep dark chocolate cupcake with raspberry cream cheese frosting…Um, yeah, that still sounds AMAZING!!! ๐Ÿ˜‰

  • OMG, those look delish! I have never had goat cheese. Once I realized I could not eat dairy products without looking like I was pregnant, ;) well, I stopped.... I think goat cheese may be not as bad for lactose intolerant??? Anyway, you know I am about cookies over cupcakes.. :) I hope the next dessert tend is all about cookies! :)
