Happy Thursday! I hope you are having a great week! If you read yesterdays post, then you know all about my cleaning spree on Tuesday night! Well, I don’t know if it is the warm weather or what, but it continued again last night. I decided that I need to clean out all the drawers that are “hiding” things like oh, years of papers! Basically anything that didn’t have an assigned home would get hidden in a drawer because I loathe clutter! 2.5 hours later (I think that’s about as long as I can clean before I get hungry ;)) I cleaned every drawer out and the linen closet! It’s a good thing today is trash day! On the plus though, I did find $80 in Nike gift cards, $50 in TJ Maxx gift cards and a brandy new pair of headphones!! I was most excited about the headphones because I am in serious need of a new pair, but can’t find the ones I like anywhere! I most have bought an extra pair awhile back! So excited! But you know what the gift cards mean….I must go buy new clothes to replace the ones I just got rid of! haha Or save them for a rainy day πŸ˜‰ Ok, now time for some food!

This recipe was a quick idea I had after a workout to satisfy my sweet and salty craving! It definitely did that and more! The honey added such a nice sweetness, plus gave my body that quick carb that it needs right after a workout!

Blueberry, Honey & Grilled Goat Cheese Sandwich 3

Fit Ingredients

  • 2 slices bread of choice (I used this one)
  • 1/4 c mashed fresh Driscolls blueberries
  • 1 oz goat cheese
  • 2 tsp raw honey

Directions

1. Spread your mashed blueberries on 1 slice of bread.

2. Spread your goat cheese on the second slice of bread.

3. Drizzle honey over the goat cheese.

4. place goat cheese and honey bread on top of blueberry bread.

5. Heat a non stick skillet over medium heat.

6. Place your sandwich, goat cheese side down, in the pan and cook until golden.

7. Flip and repeat on the blueberry side.

8. Slice in half and serve.

Sweet and salty all in one bite makes me one very happy girl! This sandwich hit all those notes PLUS some! Absolutely delicious! Plus, it was a great quick meal, post workout with a sliced apple!

  • NOT FAIR!!!!!!!!!!! HAHAHAHAHAHAHA omg you're not going to believe me, BUT it's true so believe me - I bought BOTH blueberries, bread, AND GOAT cheese yesterday to make this sandwich and post it on my blog hahahahaha omg no way! Beat me to it babe ;) NICE WORK!

  • That looks amazing! I don't know much about goat cheese since I don't eat cheese. Is it lactose free? Same high fat content as regular cheese or less? THX! OMG on the gift cards - how exciting is that!!!!! What are the headphones you like. I hate mine!

  • PS: Got to say that I really do NOT like any of the paleo & low carb breads from Julian - tried them all. I like their old staples & now I heat they are going to discontinue them. Honestly, some of their original breads did not have that many carbs.. I rather have flavor & a few more carbs - just me. :)

  • No clue it was grilled cheese month! I do love grilled cheese and cannot remember the last time that I had one. Another thing that is so versatile and seriously could throw anything into a grilled cheese sandwich and it would still taste awesome. LOL!

  • Oh yum! So much good in this sandwich! My mum has the worst junk drawer and I try to clean it out every couple of months (as I still live at home) but it seems to go back to messy within a few minutes - same as our tupperware drawer. I like to be organised so it drives me nuts haha. The last thing I forgot about was a meeting! I remembered 15 minutes after I was supposed to be there and I was mortified because I am usually always early or just on time and never forget anything - needless to say, my google calendar SMS updates went back on ;P

    This recipe was so yummy!!! I bookmarked it so I wouldn't forget to make it. It was a healthy little slice of heaven. A delicious snack! The only modification I made was add strawberries, instead of blueberries. There weren't any blueberries in the frig or at the farmer's market this morning. Keep those healthy recipes coming!

  • LOVE this! Have you ever had Trader Joe's blueberry cinnamon goat cheese? It's amazing...and I may or may not have some in my fridge right now that I've been hoarding...um, I mean SAVING for a rainy day! ;) Lately, I've been trying to use up the cranberry goat cheese I bough in bulk...man, that stuff goes on EVERYTHING! So good! I love that you "found" gift cards while you were cleaning! That never happens to me! I was just cleaning out some drawers in the office today and now I have a collection of "what the hell are these?!" items! I'm scared to throw them out in fear that they actually go to something I might need! Lol
