Carrot Cake Donuts 1

Carrot Cake Donuts

Serves: 4

Happy Friday! I hope you have had a great week! I know many of you are off today for the holiday. If you are, I hope you are doing something fun! πŸ™‚ Today I am sharing with you a healthy version of one of my favorite desserts, carrot cake! With Sunday being Easter (and bunnies loving carrots πŸ˜‰ ) I thought it would be a perfect time to share this! Instead of making it into a traditional cake or cupcake, I thought that making it into a donut would be fun and allow you to enjoy one of these while drinking your tea (or coffee) on Sunday morning! What a perfect way to start off Easter! I hope you enjoy! πŸ™‚

P.S — I think this post clearly shows that I did not inherit my mothers frosting and decorating talents! πŸ˜‰

I put on some weight from that! :) I know they are healthy but at my age with the hormones AND my body that is hard to maintain & loves t gain weight, I have to stick so close to my normal eats. I didn't have a donut pan so I peeled and sliced 3" carrots to insert into the muffins before baking to create the hole. The carrots, after I popped them out if the baked muffins were delish!
