Happy Friday! I hope you have had a great week! I know many of you are off today for the holiday. If you are, I hope you are doing something fun! πŸ™‚ Today I am sharing with you a healthy version of one of my favorite desserts, carrot cake! With Sunday being Easter (and bunnies loving carrots πŸ˜‰ ) I thought it would be a perfect time to share this! Instead of making it into a traditional cake or cupcake, I thought that making it into a donut would be fun and allow you to enjoy one of these while drinking your tea (or coffee) on Sunday morning! What a perfect way to start off Easter! I hope you enjoy! πŸ™‚

Carrot Cake Donuts 2

Fit Ingredients

  • 1/4c + 2 tbs (42g) almond flour
  • 2 tbs (14g) coconut flour
  • 2 tsp (10g) psyllium husk (or flax/mila)
  • 1/4c baking stevia (or desired dry sweetener, to taste)
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 3/4 tsp ginger
  • 1/2 tsp cardamom
  • 1 large egg
  • 2 large egg whites
  • 1/4c coconut milk (or milk of choice)
  • 1.5 tsp pure vanilla extract
  • 1/2 tsp butter extract, optional
  • 1/2 c (65g) shredded carrots

Frosting

  • Donut pan
  • non stick spray/oil of choice

Directions

1. Pre heat your oven to 350 degrees.

2. Spray 4 donut molds with non stick spray.

3. In a bowl whisk together your dry ingredients: almond flour, coconut flour, psyllium, sweetener, baking powder and spices.

4. In a second bowl whisk together your wet ingredients: egg, egg white, milk, vanilla, butter extract.

5. Mix your dry ingredients into your wet ingredients.

6. Fold in your shredded carrots.

7. Divide the batter evenly among 4 donut molds.

8. Bake for ~ 25 minutes or until they spring back at the touch.

9. Allow donuts to cool.

10. While donuts are cooling mix together your frosting ingredients.

11. Divide the frosting evenly among the 4 donuts, spreading over the tops.

12. Serve along side some tea!

13. These will stay fresh in a sealed container in the refrigerator for up to 3 days.

  • OH MY! Look so delish! Of course I do not have half the ingredients nor the pan to bake in!!! I have to be so careful about trying all these wonderful recipes by you & Laura! I put on some weight from that! :) I know they are healthy but at my age with the hormones AND my body that is hard to maintain & loves t gain weight, I have to stick so close to my normal eats. I am still going to try some but I have to be careful! How about you send me one of these. ;) KIDDING! So delish looking!!!!! No holiday celebrating here. Not Easter for me & even though I am Jewish, I do my own thing... I celebrate the holidays in my own way but honestly & am not a religion type person... :)

  • Carrot cake is by far my favorite cake, so i can only imagine these suckers will be on my top 5 favorite foods ever!! :) & to answer your questions: We'll be celebrating Easter on Sunday and having a nice Easter dinner (when Joshua gets home from work though of course). Huge baseball fans.. not like youre surprised though :)

    I didn't have a donut pan so I peeled and sliced 3" carrots to insert into the muffins before baking to create the hole. The carrots, after I popped them out if the baked muffins were delish!
