Happy Monday! I hope you had a great weekend! The boyfriend and I stayed pretty low key. Saturday we went to see the new Nicholas Parks movie, Safe Haven. I really enjoyed it! Sunday was spent baking away in the kitchen! After about 4 hours I finally cleaned up and was ready for bed….at about 5:30pm! Instead, I made some tea and relaxed. Such a great way to end the weekend! 🙂

Today’s recipe is not only quick and super flavorful, but it was made on an amazing new bread that I had the chance to try out! The wonderful people over at Food For Life reached out to me about 6 weeks back. They offered to send me not one, but two loaves of their new flax bread! Ezekial bread has always been one of my favorites! I have been eating the bread, english muffins, tortillas, wraps, hamburger buns, cereal, etc for at least 5 years! All such great products! As soon as the bread arrived I knew immediately that it was going to be delicious because you could see all the flax seeds on the outside! (Plus the nutrition stats were awesome!)  I love the nutty flavor of whole flax seeds! One afternoon I was craving comfort food, grilled cheese in particular. I knew this bread would make one amazing sandwich….and that it did! It was by far the best bread I have had in a long time! Then again, I thought that maybe my opinion was bias since I haven’t eaten bread in forever. So, I tested it out on the boyfriend and my sister! Both of them loved it just as much as I did! I hope you enjoy this recipe and give this bread a try! 🙂

Grilled Avocado, Cranberry & Goat Cheese Sandwich 2

Fit Ingredients

  • 2 slices Ezekiel Flax Bread**
  • 1/2 c (65g) frozen cranberries
  • 1 oz (28g) goat cheese
  • 1 oz (30g) fresh avocado
  • sweetener for cranberries, optional


  • medium skillet



1. In a microwave safe dish thaw your cranberries.

2. If desired, mix some sweetener into your cranberries (fresh cranberries are tart so adjust to your own preference)

3. Mash your cranberries, slightly.

4. Spread the avocado on 1 slice of bread.

5. Spread your cranberry jelly on top of avocado.

6. Spread your goat cheese on the second slice of bread.

7. Lay the bread with goat cheese on top of cranberry avocado bread.

8. Heat a non stick skillet over medium heat.

9. Place sandwich in the pan.

10. Toast for 3-4 minutes.

11. Flip and toast for an additional 2-3 minutes.

12. Slice on the diagonal and eat!

** I do not use butter or oil on the outside of my bread. I like the nice crisp toasty bread from the skillet. Feel free to use oil/butter of choice on the outside of your bread, if desired.

The filling in this sandwich is sooo creamy it literally melts in your mouth! The nutty flavor of the bread combined with the sweet cranberries, creamy avocado and salty goat cheese….PURE PERFECTION!! There aren’t any words to describe the euphoria that I experienced when I took my first bite!
