Happy Monday! I hope you had a great weekend! I finally had a bit of time to get into the kitchen and work on some recipes! I was really happy about that! I haven’t been in the kitchen too much lately, so it was a nice change of pace. Unfortunately, I didn’t rate either of the recipes an A++, which means it will be back to the test kitchen this week to revamp them a bit! (Yes, I do re-do a lot of my recipes several times before posting them!! haha)

This recipe is another quick throw together from a few mornings ago. I had some left over steamed broccoli that I wanted to use up. I was going to put it in an omelet but then thought, why not mix it together with the egg. Once I did that and added a few spices, it seemed thick enough to make into a pancake…..and so the fritters were born! They really can’t get any easier than this! I hope you enjoy! ๐Ÿ™‚

Mini Broccoli Fritters 4

Fit Ingredients

  • 3/4c (127g) steamed broccoli, finely chopped (or run through your food processor)
  • 1 large egg
  • Seasonings of choice: I used garlic powder, onion powder, black pepper and chili powder (a pinch of each)

Directions

1. Whisk your egg in a bowl.

2. Mix in broccoli and seasonings.

3. Heat a non stick skillet over medium heat.

4. Using a tablespoon, drop mixture into 3-4 servings.

5. Cook for 3-4 minutes.

6. Flip and cook for an additional 2-3 minutes.

7. Serve warm.

That’s it!! How simple is that? Two ingredients and you are good to go! I had these along with an egg white omelet, roasted brussels sprouts, sliced banana and hazelnut butter! Soooo good and filling! ๐Ÿ™‚

**These would also taste amazing (for my non paleo friends) with some cheddar cheese mixed in! ๐Ÿ™‚

  • So funny, I just made broccoli/zucchini fritters. They're amazing. LOVE them. I also thought that they'd be great topped with nutritional yeast, but didn't try that yet.

  • LOVE this and how convenient that I actually bought some broccoli crowns yesterday at Shop Rite! :) I'll be making this tonight served up alongside my Slow Cooker Pulled Chicken. Workout first, then food prep, otherwise I'm going to lose motivation. XO
