Apple Pie Muffins

Serves: 2 (large muffins)

Happy Monday! I hope you had a great weekend! For those of you who were in the snow storm, I hope you are all shoveled out and things are back to normal!

Today’s recipe is a delicious (and large) muffin recipe! For those of you who have been following me since last summer, you know that I was on a kick with ‘Bakery Sized’ muffins at one point! Well, they are back for this recipe! During marathon training I was in need of some bigger snacks and these hit the spot! They are packed with protein, carbs and healthy fats to make a well rounded muffin! I used Vega Protein in this recipe because I had run out of my SunWarrior. Although, it gave it an amazing flavor, it did cause the muffins to have a slightly greenish color! So don’t be put off by the weird color, it was just my protein powder. If you choose to use SunWarrior, it will have a more natural muffin color! (Plus, if I wasn’t taking pictures in the dark from all the rain, that would have helped too!) But I do have to say, the Vega tasted mighty delicious in this recipe! I hope you enjoy! 🙂

Apple Pie Muffins 2

Fit Ingredients

  • 1/4 c + 2tbs (42g) almond flour
  • 1 scoop (1 pouch) 36g Vega Protein Powder (or any plant based protein powder)
  • 1/3c baking stevia (or powdered sweetener of choice)
  • 2 tsp apple pie spice
  • 1 tsp baking powder
  • 3 egg whites (92g)
  • 1/2c (113g) unsweetened apple sauce
  • 1/2 large apple, diced (100g)


  • large muffin tin
  • non stick spray



1. Pre heat your oven to 350 degrees.

2. Spray 2 large muffins cups with non stick spray.

3. In a bowl combine your dry ingredients: almond flour, protein powder, stevia, baking powder and apple pie spice.

4. In a second bowl whisk together your egg whites and apple sauce.

5. Mix your liquid ingredients into your dry ingredients.

6. Mix well.

7. Fold in your diced apple.

8. Divide your batter evenly among 2 muffin tins. *

9. Bake for ~ 55 minutes or until toothpick comes out clean.

10. Allow to cool slightly before serving (they will continue to cook a bit while cooling).

These muffins taste exactly like apple pie!! They were so soft and flavorful I couldn’t get over it! Plus, the added spice from the chai protein gave it a nice kick! Just throw one in a ziplock bag and take it with you for a balanced snack!

*You could always divide these up and make 4 smaller muffins. Just be sure to adjust your baking time accordingly.

  • For some reason, I've never tried baking with my Vega powder, hmm. That needs to change...especially if giant muffins are involved.

  • Gahhh, I literally just threw out a pouch of Vega because it had been sitting in my cupboard for months... I opened it over the weekend with the intentions of making protein pancakes but saw that it was green and I panicked. I guess I'll need to get another one soon ;)
