Peanut Flour Brownies with Chocolate Swirls

Happy Thursday! I hope you are having a great week! For those of you effected by the storm, I hope you and your family are safe and sound! I was lucky enough to escape to my mom’s in Massachusetts on Monday morning, so I didn’t have to ride out the storm in NJ. I have yet to go back home due to the major flooding. Although my house has power, most businesses in the area are shut down and roads are blocked off. It is a mess! Hopefully I will be able to get back home sometime this weekend! In the mean time I am going to enjoy my ‘vacation’ by getting some great workouts in, crocheting and spending time with my mom! I have not been able to bake since I just grabbed my things and ran on Monday! And as much as I am missing it, I don’t want to go and re-purchase all the things I already have at home! I did, however go to a local health food store and purchased some chestnut flour that I hadn’t seen back home! Have you ever used chestnut flour? What have you made with it? I am really excited to get back home and come up with a fun new creation! I guess you will just have to wait and see what kind of magic happens with it! πŸ˜‰

Ok, so onto today’s recipe! Let’s kick off November with a delicious peanut treat that is sure to disappear in…..less than 12 6 hours! Unless, your house is like mine, then it may be less than 2! πŸ˜‰

Fit Ingredients

  • 3/4c (90g) peanut flour
  • 1/4c (28g) coconut flour
  • 2/3c baking stevia (or sweetener of choice) adjust to your desired sweetness
  • 5 large eggs
  • 1 tbs pure vanilla extract
  • 1/2c (113g) applesauce
  • 1-2 tbs peanut butter (I used 1, but I think 2 would be better)
  • 1tbs cocoa powder
  • water

  • 11×7 inch baking pan
  • parchment paper

Directions

1. Pre heat your oven to 350 degrees.

2. Line your baking pan with parchment paper

3. In a bowl, whisk together your dry ingredients; peanut flour, coconut flour and stevia.

4. In a second bowl, whisk together your eggs, vanilla, applesauce and peanut butter.

5. Combine your wet and dry ingredients.

6. Mix until just incorporated.

7. Pour your batter into your baking pan and spread evenly.

8. In a small dish mix your cocoa powder and about 1-2tbs of water. (You want the consistency of chocolate syrup)

9. Drizzle your chocolate sauce over the top of your batter.

10. Drag the tip of a sharp knife through your batter to create a swirl like design.

11. Bake the brownies for approximately ~22 minutes.

10. Allow the brownies to cool before serving.

So how did they turn out? Well, you all know the obsession that the boyfriend and I have with peanut butter….let’s just say they didn’t last more than 2 hours! I topped mine with some greek yogurt and my mouth was in pure heaven! The boyfriend said they were “Banging!”, so again, that means SUCCESS!! πŸ™‚ If he likes something healthy, anyone will like this! πŸ˜‰

  • SARAH I literally said "holy f**k" out loud when I read this recipe. I'm serious, this has to be my favorite recipe you've made to date. I HAVE to make these, like NOW!!!!!!!!! I sadly just ran out of coconut flour-- emergency grocery trip here I come!!! :D Oh and the new blog look? AMAZINGNESS!!!! I love that header, so modern and chic!!

  • I'm so glad your site is back because these need to be made NOW! Peanut, protein and chocolate? Yes, please. I'll even take your word that it'll be okay with coconut flour. My nemesis, coconut flour. I'll be joining the challenge--but skipping pumpkin day, haha. Or can I substitute squash? ;D

  • So glad to hear you're okay. I still can't get over how surreal the whole thing is...like I see it on tv and it just seems like scenes from a movie or something. Good to know you're able to make the best out of the situation though...mama/daughter time + relaxation is the BEST! :) These brownies have my name written ALL over them! I pinned them before I even looked at the recipe...you had me at peanut flour! Lol Can't WAIT to try them!!
