Reese’s Peanut Butter Cup Stuffed Cupcakes

Serves: 3 (large)

Nothing says Happy Father’s Day better than a sweet indulgent treat! Yes, even the most fit person can make room for a small splurge every once in a while! When my boyfriend took his first bite he hadn’t even swallowed the cupcake before responding with “absolutely amazing!” For him to respond to any recipe like that (healthy or not), means it is REALLY good! He is my pickiest critic! So, if you’d like to treat dad to something absolutely delicious, then these cupcakes are sure to do the trick!

There’s also a healthier adaptation listed below for us die-hard fitness freaks! ?

Fit Ingredients

  • 1/2 c (66g) whole wheat flour
  • 1/4 c granular sweetener of choice
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3 tbs coconut milk (or milk of choice)
  • 1/4 c unsweetened apple sauce
  • 2 egg whites
  • 2 tsp pure vanilla extract
  • 10 drops liquid stevia, optional (add more or less depending on desired sweetness)
  • 4 Reese’s peanut butter cups*

Frosting*

  • 1/4c butter
  • 1/4c + 2tbs cocoa powder
  • 1 1/2c powdered sugar
  • 1/4c + 1.5tbs coconut milk
  • 1/2 tsp vanilla extract

Directions:

Pre heat your oven to 350 degrees. Spray 3 large muffin tins with non stick spray. In a bowl mix flour, granular sweetener, baking powder and baking soda. Whisk together. Add in coconut milk, egg whites, applesauce, vanilla and liquid stevia. Mix well. Divide the batter into 2 batches. Using one half, fill each of three muffin tins. Place a whole Reese’s peanut butter cup on top of batter. Divide remaining half of the batter between the three tins. Make sure you fully cover each peanut butter cup. Bake for 15 minutes.

While cupcakes are baking make your frosting. Melt your butter. Add the cocoa powder to your butter. Alternating back and forth, add your powdered sugar and milk to the cocoa/butter until you reach desired consistency. Mix in your vanilla.

Allow your cupcakes to cool before frosting! Take your remaining peanut butter cup and divide into 4 pieces. Top each cupcake with a 1/4 piece of peanut butter cup (and eat the remaining quarter ;))

This recipe makes 3 LARGE cupcakes. You could also divide this into 5-6 smaller cupcakes if desired! But really, who wants a small Reese’s peanut butter stuffed cupcake? Not my boyfriend! :)

*To make this recipe the healthy way make the cupcakes as directed, leaving out the peanut butter cup and add in 1/4 c peanut butter to batter. Make a healthy protein filled frosting by taking 1/2 c fat-free, low sodium ricotta cheese, chocolate protein powder and stevia, mixing until desired consistency and sweetness is reached! DELICIOUS!!! Now, THAT’S a FIT recipe! :)
