Did you know that yesterday was National Chocolate Chip Day? In honor of this chocolatey day I decided to make my boyfriend some delicious, moist and gooey chocolate chip muffins with a healthy twist…or two! I would highly recommend eating these while they are warm!

Fit Ingredients

  • 1 1/2 c whole wheat flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1 c splenda (or sweetener of choice)
  • 1 1/2 c greek yogurt (I used Fage 0%)
  • 40 drops liquid stevia
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • 1 c chocolate chips (mini chips would work best, but I didn’t have any on hand)

  • 12 cup muffin tin
  • 12 muffin liners

Directions

Pre heat your oven to 350 degrees. Line your muffin tin with the muffin liners. In a bowl, mix your dry ingredients; whole wheat flour, baking soda, baking powder and splenda. In a second bowl, mix your wet ingredients; greek yogurt, liquid stevia, vanilla extract and eggs. Mix your wet ingredients into your dry ingredients. Fold in your chocolate chips. Fill each cupcake liner 3/4 full. Bake for 14-18 minutes, depending on your oven. Eat immediately! :)
