Edamame, Heirloom Tomato & Goat Cheese Pasta

I came home yesterday afternoon in need of a quick lunch time meal. I opened my refrigerator and this is what I ended up with! It was oh so yummy! It can be served warm or chilled!!

Fit Ingredients:

  • 4 oz chicken breast, cooked and shredded (I had left over cold chicken that I just heated and shredded up)
  • 70g heirloom tomatoes, sliced (they make everything look so pretty!)
  • 1/4 c (37g) shelled & pre-cooked edamame
  • 1 oz goat cheese
  • 1 package Shirataki Noodles (or pasta of your choice)
  • 7g shelled walnuts
  • 1/2 tbs fresh squeezed lemon juice
  • 2 tsp italian seasoning
  • salt & pepper, to taste

Directions:

Drain and rinse your noodles. Heat them in the microwave for 1 minute then pat dry with a paper towel. Put your noodles, edamame and chicken in a bowl and heat in the microwave for 1 1/2 minutes. Add your lemon juice, goat cheese, italian seasoning, salt (optional) and pepper to the noodles. Mix well until the goat cheese has melted and coated all of your noodles. Add your tomatoes and mix. Sprinkle with your walnuts!

Total time was about 7 minutes fridge to table! If you need to cook your chicken add-on about another 15 minutes. Either way, it is still quick, easy and super healthy!!!
