Baked Egg Whites with Oat Bran & Flax Crust

My favorite things to eat for breakfast are egg whites, oat bran, flax and chia seeds. I don’t know why, but they are! I literally eat them every day for breakfast. Sometimes I will add in fruit, nut butters, seeds, veggies….but more often than not I eat it as is. However the last few days I have been getting sick of my boring breakfast and have been thinking of a way to spice it up! I remembered a recipe that I had seen in Women’s Muscle and Fitness magazine: oatmeal, ground turkey, egg whites and seasoning to taste, mixed in a bowl and topped with ketchup. At the time I had become addicted to this meal! That was many, many moons ago………Fast forward a few years and I have updated this meal to something that is even more delicious! And it still included almost all of my favorite breakfast foods! 🙂

Fit Ingredients:

  • 1/4 c (40g) Oat Bran
  • 6g ground flax seed
  • 4 egg whites, separated
  • 2 oz (56g) ground turkey breast
  • 40g frozen spinach
  • 3/4 tsp italian seasoning
  • 1/2 oz (14g) reduced fat shredded mozzarella
  • Ketchup, optional (or marinara sauce would be great too!)

Directions:

Pre heat oven to 350 degrees.

Mix the oat bran, flax and 1 egg white in a bowl. Spray each loaf pan with non stick spray. Divide the oat mixture between loaf pans and press firmly into the bottom of the pan with a spoon (or your fingers). Bake for 8 minutes.

While those are baking, cook your ground turkey breast and spinach in a non stick pan until cook through. Remove from pan and put in a bowl to cool. Once cooled, add your remaining 3 egg whites, seasoning and cheese. Spoon half of the egg mixture over the top of each crust and bake for another 16-18 minutes, or until eggs are cooked. Serve with ketchup or marinara sauce for dipping (optional).

 They came out absolutely delicious!!! They were also sturdy enough that you could pack them and eat them on the go!
